Not having all the ingredients for the Wonder Soup, I made my version & would like to share. I prefer a hot meal & this is just as delicious for dinner.
4 large Onions, chopped
4 cloves Garlic, sliced
2 sticks Celery, chopped
4 tomatoes, cut in wedges
1/2 Cabbage, chopped
1 Red & 1 Green Capsicum (peppers), diced
1/2 yellow Zucchini, chopped
1/4 Cauliflower, chopped
Salt, pepper
1/4 tsp chili powder
dried basil, to taste
1/2 cube, veg or chicken stock, optional
650 mil water (22 ozs.)
Method:
1. Saute onions in 2 teaspoons olive oil until soft, add garlic, chili powder & basil.
2. Add all other vegetables & stir on low fire to sweat them out.
3. Add water & stock cube, salt & pepper. Cook on low heat until done.
