Wheat is toxic, sorry. The wheat today is pure junk food. So sourdough it, call it brown bread, call it whole wheat, it's terrible. There are a few ancient grains left out there, they cost quite a bit and still likely you will have a gluten issue even if you ate those. I read Nourishing Traditions, that book is off and here's why. Grains today or hybridized, GMO and so far off what the grains used to be. Google WHEAT BELLY and read up on it there, the science will help you understand more. So when they claim sourdough like your past family did, it's old info and acting like wheat today is good.
