Hi - is it ok for me to have a cold salad of chick peas, chopped tomatoes, onions, cucumbers, green chillies, coriander and mint on days 2 and 3 as lunch or dinner?

Also can I do the same with green bean sprouts or mung sprouts? Thanks

No,mm these are beans! legumes! they are not vegetables! sprouts are only OK if you mean a long green sprout and no bean. Please understand beans are pure carbs with a little protein. Read day 2 and 3. Then understand those veg are no carbs basically except the morning potato day 2. Now see the difference? It's vital after the plan you understand the differences.
