Well, wheat has been so hybridized there is little healthy about it. Even ancient purer grains you have to be careful. And even then you should do fermented breads/sourdough. People over do grains. They have no nutrients and little health value. Yes many people are allergic. Even if they don't have celiacs they are gluten sensitive.
When we say eat beef, you can have chicken. Not chicken and rice. You can have legumes, with some added fat, but no meat with it.
