Well those were really day 5 only. Day 6 mix in various veg :)

Yes it is. Is there an issue with it? Picking another veg opens the door for you to find what's best locally. I can list 5 veg here and ZERO are in your area.

Veg does not at all even come close to replacing meat. Neither does rice, or anything for that matter. However you must do your best. So eggs first as a beef replacement, then legumes with added fat, or quinoa or rice with added fat. I never recommend soy.

As a vegetarian you have to do your best.
