I will be starting day 2 tomorrow and thought I read somewhere that you can NOT have carrots on day 2. Is this right or no?? Our there any certain veggies we need to avoid?? Thank you

A carrot or 2 will be OK. Diversify though, most folks only seem to eat carrot, peas and corn. 2 of those are net vegetables.
Carrot are hybridized, higher in sugars/carbs. So do not over do is the key. No corn or peas. No avocado.
